Aktivitas Penangkapan Radikal DPPH (1,1-Diphenyl-2-picrylhydrazyl) Ekstrak Madu Sebelum dan Sesudah Pemanasan

Pemanasan pada suhu dan waktu optimum dapat meningkatkan aktivitas antioksidan madu apis trigona karena meningkatnya total fenolik, flavonoid pigmen coklat. Kemampuan diukur melalui kemampuan menangkap radikal oleh DPPH (1,1-Diphenyl-2-picrylhydrazyl). Tujuan penelitian ini untuk membandingkan perubahan parameter penangkapan serta coklat 5 jenis dari kota Bogor, Kalimantan, Sulawesi, Lombok sebelum sesudah dipanaskan yang dengan menggunakan spektrofotometer UV-Vis. Hasil menunjukkan persen inhibisi baik maupun trigona, cenderung mengalami peningkatan seiring pertambahan pemanasan. Pigmen didapatkan paling tinggi terdapat asal nilai 93% IC50 sebesar 3.435 ± 29,3 ppm persentase kenaikan 59,1 % 50o C selama 9 hari. Dengan demikian, Apis Trigona memiliki senyawa bioaktif diantaranya terbentuknya berpotensi meningkat antioksidannya pemanasan tertentu.
